When melons are in season, at their ripest
and at the peak of flavor make this salad.
There's nothing better on a hot summer day.
Ingredients:
1 honeydew melon,peeled,seeded and cubed
1 cantaloupe melon,peeled,seeded and cubed
2 teaspoons chili flakes
3 tablespoons freshly chopped mint leaves
1/2 cup olive oil
salt to taste
Freshly ground black pepper
1 cup gorganzola cheese, crumbled
Directions:
In a large nonreactive mixing bowl,
combine the melons, chili flakes,
mint, olive oil, and season, to taste,
with salt and pepper.
Serve immediately topped with cheese.
