I always wanted to try this recipe out.
Making some Italian meatballs using some
fresh pork sausage along with the beef.
Adding some fresh green and red bell
peppers to the tomato sauce
just makes good sense to me,
considering the sausage and all.
Ingredients:
Meatballs:
1 pound of ground beef 80/20
1 pound ground pork sausage, mild
1/2 cup grated Parmesan cheese
1/2 cup milk
2 eggs
3 slices day old white bread, diced
1/2 cup onion, peeled and chopped
2 tablespoons. chopped parsley
1 clove garlic, crushed
1/2 teaspoon black pepper
1/2 teaspoon salt
Sauce:
(You could make your own but for this recipe
I simply opened up a couple cans of sauce).
Directions:
Preheat oven to 400 degrees F.
In medium bowl, beat eggs slightly.
Add milk and bread; mix well.
Let stand 5 minutes. Add chuck, sausage,
cheese,onion, parsley, garlic, salt, and pepper;
mix until well blended.
Shape into 24 meatballs, 1 1/2 inches in diameter.
(I use an ice cream scoop to get the correct size).
Place in a ungreased, shallow baking pan.
Bake, uncovered, 30 minutes.
Have the tomato sauce getting warm in a big pot,
remove the meatballs to the pot of sauce,
simmer for an hour or so.
