Classic Cooked Olives

These olives are almost always served on a Greek Tapas table.

Ingredients:
3 tablespoons olive oil
5 garlic cloves chopped finely
1/2 teaspoon ground cinnamon
2 tablespoons tomato paste dissolved in 1/2 cup warm water
2 lbs. pitted green olives, boiled once and drained
1/2 teaspoon salt or to taste
1/4 teaspoon pepper

Directions:
Heat oil in a pan. Add the garlic and cinnamon,
and stir fry over medium heat for 1 minute.
Add the tomato paste mixture,
olives, salt and pepper and mix.
Simmer in the covered pan
over low heat for 20 minuts.
