Classic Lentil Soup

This is a very easy recipe,
lentil soup as it should be… with lentils.
No spices which you need to cook for hours.

Ingredients:
Can of lentils 400g (or fresh if you prefer)
Salt, pepper, olive oil
1 onion, chopped
1 carrot
1 large potato
Chicken or vegetable stock

Directions:
Dice the onion and fry for few minutes
in big saucepan with olive oil
Add diced carrot and potato
Add lentils
Add stock
Cook for 25 minutes
Take from heat, and process the soup with processor or blender.
Simmer for a few minutes and add salt and pepper to taste.
