Cranberry Granola Breakfast Cookies

Ingredients:
1/2 cup sugar
1/2 cup light brown sugar
1/2 tsp. baking soda
2 1/2 tsp. baking powder
2 1/4 cups all-purpose flour
1/2 tsp. salt
1 1/2 tsp. ground cinnamon
1/2 cup plus
2 Tbsp. butter, softened
1 large egg
1 tsp. pure vanilla extract
1/3 cup orange juice
1 cup granola cereal
1/2 cup quick- cooking oats
1/2 cup dried cranberries, chopped
1/2 cup chopped walnuts (optional)
cooking spray

Directions:
Preheat oven to 350 degrees F.
In a medium bowl, combine flour, both sugars,
baking soda, baking powder, salt and cinnamon.
In a large bowl using an electric mixer on medium speed,
beat together butter, egg, vanilla and orange juice.
Slowly beat in the flour mixture until well mixed.
Stir in granola, oats, cranberries and walnuts.
Drop dough by teaspoonfuls onto a greased
cookie sheet about 1 1/2 to 2 inches apart.
Smooth out the tops of the mounds
lightly with the back of the spoon.
Bake for 12 to 15 minutes or until lightly browned.
Let cool for 5 minutes then move
to a rack and let cool completely.
