Easy Olive Oil Pie Crust

I've been making pies and pie crusts for over 40 years.
Always making crust the "Old Fashioned Way"
Using vegetable shortning and/or butter.
Today I made a pie crust just using olive oil.
This turnd out to be great, the dough came together
real easy in the kitchen Aide mixer,
and was real easy to roll out.
I don't think you can make a mistake with this recipe.

For two 9" pie crusts:

Ingredients:
1-1/2 cups flour
3/4 cup hot water
1/4 cup olive oil
1/2 teaspoon baking powder

Directions:
In a mixing bowl combine flour and baking powder.
Add water and oil, mix until combined,
add more flour if needed to make a workable dough.
Place dough on a floured work surface.
Divide in half.
roll out one half to a 9" round,
and 1/8 " thick.
Remove from work surface using a rolling pin.
Place in pie plate.
Fill with yor pie filling.
Roll out second crust and place on top of pie.
crimp edges, flute to release steam.
Bake at 350 degrees F. until crust browns and done.
