Fig and Candied Orange Fritters

Ingredients:
2 cups unbleached all-purpose flour
1 cups sugar
1/2 cup whole milk
3 large eggs
5 tablespoons unsalted butter, melted
1 tablespoon vanilla extract
2 teaspoons baking powder
1 teaspoon salt
6 ounces candied orange peel, chopped into 1/4-inch pieces
6 ounces dried figs, chopped into 1/4-inch pieces
About 3 quarts vegetable oil

Directions
In a bowl, whisk together flour, 1/3 cup sugar, milk, eggs, butter, vanilla, baking powder and salt until smooth.
Whisk in candied orange and figs.
Place remaining 1 cup sugar into a large shallow bowl.
Heat about 3 inches oil to 375 degrees F.
in a 4- to 5-quart heavy pot over medium-high heat.
Drop teaspoonfuls of batter into oil,
about 10 at a time, and fry until puffed
and dark golden, turning once, about 1 minute.
Using a slotted spoon, transfer puffs to paper towels to drain. Immediately roll in sugar. Serve warm or at room temperature.
