A delicious refreshing salad that's great
as the entree or the appetizer.
Ingredients:
1 large head romaine lettuce
1/2 red onion
1 cucumber
2 medium tomatoes
12 black olives
1/2 cup feta cheese, crumbled
3 tbsp. olive oil
1 tbsp. red wine vinegar
1/2 tsp. dried oregano
Salt and pepper
Directions:
Cut the romaine into bite-size pieces. Slice the onion and separate the slices. Peel, seed and slice the cucumber. Cut the tomatoes into wedges. Put all the vegetables into a salad bowl with the olives and feta cheese. In a small bowl, mix together the olive oil, vinegar, oregano, salt and pepper and toss with the salad.
