Home Made Olive Oil Crackers

Today I decided to try and bake some homemade crackers.
Leafing through the cookbooks I got a pretty good idea
of how to make them and the process to follow alright.
But what kind of cracker should I bake and what flavor?
I decided to just bake a plain old olive oil cracker.
They kind of remind me of pie dough, a little puffier,
they have a nice flavor of olive oil, these are good.

Ingredients:
1- 1/4 cups flour, about
2/3 cup warm water
1/3 cup olive oil
1/2 tsp. baking powder
1/2 tsp. salt and more for sprinkling on top

Directions:
Preheat the oven to 400.
Line a large cookie sheet with parchment paper.
In mixing bowl combine the dry ingredients,
then stir in the water and oil,
mix until a smooth dough forms.
I had to add a little more flour because
my dough was still to wet to handle.
Take dough out of bowl and make into a ball.
Place on parchment paper in cookie sheet
roll out to 1/8 inch thickness.
Use a sharp knife or a pizza cutter
to cut the dough into squares.
The elasticity in the dough will
make the crackers shrink slightly
and pull away from each other,
this makes them easy to bake
without sticking together.
Sprinkle with a little salt.
Bake for 10-12 minutes until
the crackers are golden and crispy.
Mine got brown around the edge of pan
before the inside got brown
so I took them out of the oven
before any got burnt.
