Italian Fresh
Chopped Salad

Try this salad this summer time
with garden fresh vegetables
and use fresh herbs and spices.

Ingredients:
Basil Vinaigrette:
1/3 cup olive or vegetable oil
1/4 cup red wine vinegar
2 tablespoons chopped fresh basil leaves
1 teaspoon sugar
1/4 teaspoon salt

Salad:
6 cups chopped romaine lettuce
1 cup chopped fresh basil leaves
1 cup cut-up cooked chicken
2 large tomatoes, chopped (2 cups)
2 medium cucumbers, chopped (1 1/2 cups)
3 oz Italian salami, chopped
1 (15 oz) can cannellini beans, rinsed

Directions:
In tightly covered container,
shake all vinaigrette ingredients.
In large bowl, place all salad ingredients.
Pour vinaigrette over salad;
toss until coated.
Serve immediately.
