Lime Mint Calamari Salad

This calamari salad is a less spicy and simpler
version of a classic Thai dish typically made with
red pepper flakes, fish sauce, and cucumbers.

Ingredients:
1 1/2 lbs. squid, cleaned
3 tablespoons fresh limejuice
1/3 Cup olive oil
1/4 Teaspoon minced fresh garlic clove
1/2 Teaspoon salt
1/4 Teaspoon black pepper
1/2 Cup red onion slivers
1/2 Cup fresh mint leaves, chopped

Directions:
Clean squid by rinsing it in cold running water
and pat dry with paper towels.
Chop tentacles into small pieces.
Cut bodies crosswise into 1/4-inch wide rings.
Add squid and 1 teaspoon of salt to a large
pot of water and bring to a boil.
Cook squid, uncovered, until it loses
its gloss and just turns opaque,
about 30 to 60 seconds. Drain in a
colander and immediately pour into a bowl
of ice water to stop the cooking process.
When squid is fully cooled, drain and pat dry.
Mix together lime juice, garlic, salt,
and pepper in a large bowl.
Add squid, onion and mint
and toss until coated.
