Traditional Apple Kuchen

Kuchen means cake in German and this is a good one.

Ingredients:
1 c. milk
2 eggs
2/3 c. flour
3 tbsp. sugar
1/2 tsp. salt
1/2 tsp. grated lemon rind
2 tbsp. melted butter

Directions:
In a bowl, blend together milk, eggs,
flour, sugar, salt and lemon rind.
Mix until well blended.
Put the melted butter into a 9 inch pie plate.
Pour the batter into the pie plate.
Bake in a preheated 400 degree oven
for 30-35 minutes, until fluffy and golden brown.
Meanwhile fix the apple filling for the pancake.

APPLE FILLING:

2 c. thick sliced apples
3 tbsp. sugar
1/2 tsp. cinnamon
2 tbsp. butter

Directions:
Peel and slice apples. Melt the butter in a skillet.
Then add the apples, sugar and cinnamon.
Cook over medium low heat until apples are tender.
As soon as the kuchen comes out of the oven,
put the apple filling in the center.
Serve immediately. Pancake will collapse shortly
after being removed from the oven.
