We always have lots of yummy food,
but one of my most favorite dishes was this casserole.
I always make it when I have leftover ham. It's so good.
Ingredients:
4 c. diced zucchini
4 T. butter
1/2 onion finely chopped,
3 T. flour
3/4 t. salt
1 1/2 c. milk.
2 T. parsley,
2 1/2 c. cubed ham,
2 1/2 c. seasoned croutons
1 c. shredded cheddar cheese.
Directions:
Cook 4 c. diced zucchini for 7-8 minutes, drain.
While the zucchini is cooking - make a white sauce
In a saucepan over medium heat, melt 4 T. butter and add 1/2 onion finely chopped, after it sautes for a minute or two add in 3 T. of flour and stir to combine and continue cooking for another 1-2 minutes. Add 3/4t. salt and whisk in 1 1/2 c. milk. Cook until thickened.
In a large mixing bowl, mix together, cooked zucchini, white sauce, 2 T. parsley, 2 1/2 c. cubed ham, 2 1/2 c. seasoned croutons and 1 c. shredded cheddar cheese.Bake at 350 for 30-40 minutes.
