This is a great tasting pizza in a pocket,
It also makes a terrific appetizer.
This recipe is for Greek calzone,
but you can really use any fillings.
I also like pepperoni and Ricotta cheese,
or ham and pineapple.
Instructions:
Pizza dough for one pizza
Olive oil
Ground black pepper
Salt to taste
Frozen spinach (3-4 oz)
Feta cheese, crumbled (3/4 cup)
Tomato
Onion
Fresh basil
Kalamata olives (10-15)
Mozzarella cheese, grated (2 cups)
Marinara sauce
Directions:
Thinly slice the tomato and onion.
Preheat your oven to 425 degrees F.
Grease a cookie sheet using olive oil.
Form the pizza dough so it fits the cookie sheet,
covering the entire bottom.
Drain the spinach well getting as much water out of it as you can.
Lay the sliced tomatoes down the center of the dough.
Top with the spinach, then the onion.
Somewhat evenly place the feta cheese and olives on the vegetables.
Top all of this with the grated mozzarella cheese and then fresh basil
and a little ground pepper. About an inch from the filling,
cut the dough on each side five times spaced equally apart.
Fold up the bottom of the dough, then "braid" the sides that you just cut. At the other end, tuck it up and braid over it.
Rub olive oil on outside of loaf. Sprinkle salt and pepper on the top. Place in the preheated oven and bake for 15-17 minutes
or until lightly browned.
Heat your favorite marinara sauce for dipping.
