This was a dish that was always on the holiday table.
Also known as German sweet and sour potatoes.
I add some cut up fresh endive or leaf lettuce.
Ingredients:
8 each potatoes, boiled in skin
1 each onion, diced
1/4 teaspoon salt
1/4 teaspoon pepper
3/4 cup sugar
4 each bacon, slice
3/4 cup vinegar
Directions:
Peel and cube potatoes. Place in a pot of cold water, bring to a boil, lower heat and simmer 15 minutes. Add diced onion,
salt, pepper, and sugar. Reserve in a covered bowl.
In a small frypan, fry the bacon until crisp.
Add the vinegar to the hot bacon and bring to a boil.
Pour immediately over potato mixture, mix well.
If too tart, add a little more sugar before serving.
