This recipe is one that I created trying to copy
the good taste of Hungarian goulash in a soup.
I think it comes close and is light yet filling.
You can add some small cubed potatoes,
if you like and simmer until tender.
Ingredients:
2 cup onion, finely chopped
1/4 cup shortening
3 each green bell peppers, chopped
3 tablespoon tomato paste
1 lb beef cubes, 1/2 inch cubes
1 teaspoon Hungarian smoked paprika
2 each garlic clove, minced
6 cup beef broth
1 tablespoon lemon juice
1/4 teaspoon caraway seeds
Directions:
In a pan, fry onions in shortening until transparent.
Add green peppers and tomato paste.
Cover and simmer 10 minutes.
Add lean beef cubes and remaining ingredients.
Simmer about 1 1/2 hours, until meat is tender.
Best when chilled, and reheated the second day.
