Classic Bisquick Mix
Strawberry Shortcake

When I was young my family would
make fun of me because I used to
like to eat strawberry shortcake
out of a drinking cup.
My reasoning was simple.
You can fit a bigger piece of
the shortcake into a cup than on
a plate, and it was really good eats.

Ingredients:
2 pints fresh strawberries; sliced
1/2 cup sugar
2 1/3 cups bisquick
3 tablespoons sugar
3 tablespoons butter, melted
1/2 cup milk
Sugar to taste
3/4 cups whipping or heavy cream

Directions:
Put strawberries in a bowl with sugar, let stand 1 hour.
Preheat oven to 425 degrees F.
In another bowl mix bisquick, 3 tablespoons Sugar,
butter and milk until soft dough forms.
Pour onto an ungreased cookie sheet.
Sprinkle with sugar.
Bake 10 to 12 minutes or until golden brown.
Beat whipping cream in chilled bowl until stiff.
Spoon strawberries on tops of baked shortcake.
Top with whipped cream, cut and serve.
