Creamy Basmati Rice
Chicken Pot Pie

This is a very comforting and tasty dish.
I haven't seen a recipe for chicken pot pie
which had rice as one of the ingredients.
Usually the recipe has cubed or diced potatoes.
This is my recipe for a creamy and satisfying pie.
It's a good one.

Ingredients:
1 cup cooked chicken, cubed
1 tablespoon unsalted butter
2 celery stalks, peeled and diced
1 fresh carrot, peeled and peels
1 small onion, peeled and chopped
1/2 cup Basmati rice
1 cup cream
2 tablespoons flour
salt to taste
black pepper to taste
1/2 cup milk
1 cup boxed biscuit mix
1 slice bacon, chopped

Directions:
Melt butter in a saucepan, add celery and onions.
cook until just softened about five minutes.
removed from pan into a mixing bowl and set aside.
Add milk and rice to same saucepan,
bring to a boil,stir, reduce heat to low and cover.
Cook rice until done about 20 minutes.
Add rice to bowl with carrots and celery.
Add chicken, cream,flour salt and pepper to bowl.
Mix to combine ingredients.
Using a vegetable peeler, peel some raw carrots
into bowl, mix to combine.
Place mixture into a glass casserole dish.
Preheat oven to 350 degrees F.
in a seperate bowl add bisquit mix and milk.
Pour on top of chicken mixture in casserole.
Place bacon around top of bisquit mix.
Bake uncovered for about 1 to 1 1/2 hours,
or until browned on top and warmed though.
Let cool a few minutes before serving.
