I love this recipe when the garden
is full of fresh ripe tomatoes.
It even works with the green ones to.
Ingredients:
8 large fresh tomatoes
salt to taste
1 tablespoon prepared mustard
3 tablespoons finely chopped onion
1 cup soft fresh bread crumbs tossed,
with 2 tablespoons melted butter
olive oil
fresh chopped parsley
Directions:
Wash tomatoes and cut off ends.
Halve tomatoes crosswise.
Arrange tomatoes, but sides up,
in a baking pan sprayed with olive oil.
Sprinkle with salt then spread with mustard.
Top with chopped onions and buttered bread crumbs.
Arrange rack in lowest position of oven.
Broil tomatoes on lowest rack of oven for about
8 to 12 minutes, until hot and golden brown.
