Fishermen's Style
Fresh Mussels or Clams

I call this recipe fisherman's style because
one day I was fishing and caught a clam,
I was fishing in a fresh water river at the time.
On the way home I stopped and bought some mussels
and driving along I came up with this amazing dish.

Ingredients:
2 lbs clams (or mussels)
3 tbsp olive oil
2 tbsp chopped onion
2 cloves garlic
1 tbsp flour
1/2 cup dry white wine
1/2 cup water
Piece of chili (optional)
1 bay leaf
2 tbsp chopped parsley

Directions:
In a deep frying pan heat the oil and sauté
the onion and garlic until onion is softened.
Stir in the flour, then add the clams or Mussels.
On a high heat, add the wine, water, chili, and bay leaf.
Cover the pan and shake the pan until the clam shells open.
This takes about 3-4 minutes.
Remove from heat when most of the shells have opened.
Pour into a serving dish and top with chopped parsley.
Serve with chunks of fresh Italian bread.
