Ingredients:
Fresh Celery
1 cup Italian flavored breadcrumbs
1 egg
chicken stock
olive oil for frying
salt to taste
black pepper to taste
Directions:
Cut off the green leaves, and cut the stalks
of the celery in pieces about an inch long.
Wash them and put them into a pot, cover with water.
Bring to a boil for about fifteen minutes.
Then remove from pot to dry.
Beat up an egg with a little stock,
add salt and pepper, dip the celery in,
then roll it in bread crumbs,
and fry in olive oil until browned.
