Fried Potato Latkes with
Applesauce and Sour Cream

A classic Hanukkah dish, these warm, crisp latkes
are also known as potato pancakes.
They make a comforting winter snack.
I like to serve them with some sour cream.

Ingredients:
1 pound russet potatoes, peeled and grated
1 medium yellow onion, peeled and grated
1 egg, lightly beaten
2 tablespoons unbleached flour
1 teaspoon salt or to taste
1/8 teaspoon freshly ground pepper
1 1/2 tablespoons canola oil

Directions:
Preheat oven to 200 degrees F.
Combine all ingredients except the oil in a bowl.
Heat 3/4 tablespoon oil in a skillet over medium-high heat.
Drop 3 tablespoons batter (1 per latke) into the pan.
Reduce the heat to medium-low, and cook
until golden brown, about 5 minutes each side.
Transfer to a paper towel lined plate to drain.
Repeat, using all the batter
and the remaining oil as needed.
Keep them warm in the oven heated to 200 degrees F.
until all latke are fried and your ready to serve them.
Serve warm with applesauce and sour cream on the side.
