Use your imagination or what ever ingredints
you have available to prepare these flavorful chops.
Some favorite combinations include
cilantro and lemon zest;
Rosemary, thyme and orange zest;
and tarragon and lemon zest.
Ingredients:
2 tablespoons chopped fresh herbs such as rosemary,
thyme, and/or oregano.
1 teaspooon citrus zest such as orange, lemon or lime.
1 tablespoon olive oil.
4 veal chops, 1 inch thick ( about 8 oz. each).
1/2 teaspoon salt.
Directions:
Preheat grill or broiler.
In a small bowl, combine the herbs,
zest, and oil. Rub over chops.
Place the chops on the grill rack or broiler pan.
Grill or broil the chops (4 inches from heat source)
turning once, for 8 minutes,
or until an instant-read thermometer inserted
in the center registers 130 degrees F.
Sprinkle with salt and serve.
