These Italian Stuffed Oranges are quite elegant,
and will add grace to a special occasion.
They'll take about an hour to prepare
(plus 2 hours chilling).
Ingredients:
6 large, ripe oranges
3/4 cup + 2 tablespoons powdered sugar
1/2 cup + 2 tablespoons peeled blanched almonds
1 cup whipped cream
2/3 tablespoon Grand Marnier
Directions:
Take four oranges and cut their tops off. Set the tops aside.
Carefully extract the pulp from the oranges and set it aside;
you can use it for other things, for example fruit cocktail.
Squeeze the remaining oranges.
Lightly toast your almonds in the oven,
and then grind them finely.
Combine the ground almonds, sugar, juice,
and Grand Marnier, and mix well,
then combine the mixture with the whipped cream.
Fill the pastry bag with the whipped cream mixture
and fill the hollowed out oranges.
Lay the covers over the filling,
on a slant so some of the filling shows,
and arrange the oranges on a serving dish.
Chill them for two hours in the refrigerator and serve.
