This is one of my recipes for orange chicken.
The spicy warm smell of cinnamon mixed with
citrus fills the kitchen as it cooks.
Ingredients:
4 boneless, skinless chicken breast halves
1/4 teaspoon salt
1/4 teaspoon pepper
olive oil
1 small can mandarin orange segments, drained
1/4 cup orange juice
3 Tablespoons orange marmalade
1/4 teaspoon ground cinnamon
Directions:
Flatten chicken breasts to 1/4 inch thickness
with a meat mallet or rolling pin.
In a small bowl, combine orange segments,
orange juice, marmalade and cinnamon. Set aside.
Season chicken with salt and black pepper.
Coat a large nonstick skillet with olive oil,
heat over medium-high heat.
Add chicken, cook 3 to 4 minutes
until lightly browned.
Turn chicken, reduce heat to
medium-low and cook 2 to 3 minutes longer.
Pour orange mixture over chicken and
heat for 3 to 4 minutes until heated through.
