I like this sweet potato recipe so much, this is a good recipe!
Ingredients:
1 1/2 pounds sweet potatoes, peeled and quartered
3/4 teaspoon salt
3 tablespoons unsalted butter
1/4 cup heavy cream
1 teaspoon pure vanilla extract
1/8 teaspoon freshly ground black pepper
1/8 teaspoon ground nutmeg
Directions:
Place the potatoes in a large saucepan
and add enough water to cover.
Add 1/2 teaspoon salt and bring to a boil.
Reduce the heat to medium and cook
until fork-tender, about 20 minutes.
Drain and transfer to a bowl.
Mash the potatoes with a fork,
then add 3 tablespoons of the butter,
the cream, vanilla, netmeg, pepper and
remaining 1/4 teaspoon salt.
Mix well, cover to keep warm, and serve.
