Pan Fried Kumatoes

Kumatoes work just as well in breading and
pan frying as the early green tomatoes do.
Nice for an entree or garnish for meats.
The dish resembles fried sliced eggplant.

Ingredients:
Fresh Kamatoes, washed and sliced
Breadcrumbs
Eggs
Olive oil for frying
salt to taste
black pepper to taste

Directions:
Take the Kumatoes and cut in slices 1/2 inch thick,
rejecting the first and last slice ;
roll them in flour and slowly fry brown in oil.
Sprinkle pepper and salt over them.
Some like a little sugar; serve on a hot dish.
