Ricotta, Walnut and
Chocolate Chip Cookies

These are a little different from the "normal"
chocolate chip cookies because of the ricotta.
They are moist and chewy with chocolate chips.
These are without a dought, one of the best
cookie recipes that I have ever created.
I knew these were going to be good because
I could'nt stop sampling the cookie dough.

Ingredients:
1 cup white sugar
1/2 cup butter, softened
1/2 cup chocolate chips
1/2 cup chopped walnuts
8 ounces ricotta cheese
1 teaspoons vanilla extract
1 eggs
2 cups all-purpose flour
1 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt

Directions:
Preheat oven to 350 degrees F.
Line baking sheets with parchment paper.
In a large bow, with the mixer a low speed,
beat the sugar and butter until combined.
Increase speed to high and beat until light and fluffy (about 5 minutes). Reduce speed to medium and beat in the ricotta, vanilla and eggs.
Reduce speed to low. Add flour, baking powder, soda
and salt, beat until dough forms.
Stir in the chocolate chips.
Drop dough by level tablespoons, or roll into
a walnut size ball and place about 2 inches apart
onto the parchment lined baking sheet.
Bake at 350 degrees F. for about 15 minutes
or until cookies are very lightly golden (cookies will be soft).
With spatula, remove cookies to wire rack to cool.
