It's time to start thinking about outdoor grilling.
This is a great recipe I came up with for grilled shrimp.
The secret is to marinate the shrimp in peanut sauce.
Talk about a tasty satay shrimp dish, Wow this is good!
Ingredients:
1 pound frozen shrimp, thawed
2 cups fresh frozen sweet corn
1 large can diced tomatoes, drained
1 cup creamy peanut butter
2 tablespoons apple cider vinegar
2 tablespoons brown sugar
Fresh leafy lettuce
2 lemons, sliced
Directions:
In a bowl combine peanut butter, vinegar,
cayanne pepper and brown sugar.
Put shrimp and peanut mixture in a sealable plastic bag.
Refrigerate at least two hours or overnight.
In a mixing bowl put tomatoes and corn.
Heat up grill, Remove shrimp from marinade, discard marinade.
Place shrimp on skewers and grill, turning often,
cook until just cooked through not to death.
Remove shrimp from skewers, add to bowl with corn and tomatoes.
Serve salad on a bed of fresh green and leafy lettuce.
With sliced lemons as a garnish.
