Sweet and Salty Encrusted
Fried Tilapia Fish Fillets

These have really crunchy goodness.
A little bit sweeter than I like
but not so sweet to overpower.
I had these with fresh spinach.
A really good and comforting meal.

Ingredients:
2 Tilapia fish fillets
1/2 cup flour, or more
1 cup chex-mix cereal, crushed
2 tablespoons mayannaise
Canola oil for frying

Directions:
Defrost fish if needed, pat dry with paper towels.
Coat fish in flour, spread with mayonnaise,
dredge in chex-mex cereal crumbs.
Heat oil in frypan.
Fry fish for only about 2 minutes
on each side or until fork tender and done.
