This recipe makes for a spicy, smokey
and citrus tasting grilled chicken.
If you put the ketchup and suger in
the basting marinade the chicken
will burn on the grill before done.
Ingredients:
1 whole chicken cut into 8 portions
Marinade:
1/4 cup freshly squeezed orange juice
1/4 teaspoon liquid smoke
1/2 teaspoon dry mustard powder
1/4 teaspoon cayenne pepper
1 teaspoon Worcestershire sauce
Basting sauce:
1 cup Ketchup
1/8 cup dark brown sugar, packed
Directions:
Place in a bowl the orange juice, liquid smoke
dry mustard, pepper and Worcestershire sauce.
Place chicken pieces in marinade and refrigerate
for at least two hours or overnight.
Preheat grill to about 350 degrees F.
and brush grate with oil.
Remove chicken pieces and place on the grill.
Cook for about 40 minutes turning often, do not let burn.
In a bowl combine the brown sugar and the ketchup,
add other and more spices as you like.
Baste chicken with the sauce turning often, do not burn.
