Winter Orange Soup

I don’t know about all of you,
but I’m ready for some warmer weather
and the bounty of berries that spring brings!
There's so much snow lately.
This is a good yet simple soup to make.

Ingredients:
2 cans low sodium chicken broth
2 cans water
1 large sweet potato
2 large carrots
1 small butternut squash
1 onion
1 apple

Directions:
Peel the sweet potato, carrots and squash.
Cook in the chicken broth until tender.
Mash well or puree in a blender or food processor.
Return to the pot.
Saute the onion and apple in the skillet
until the apple is soft and the onion is browned.
Use a cooking spray in the skillet.
Stir the onion and apple into the pureed mixture.
Simmer for 10 minutes.
Add ginger, cinnamon, nutmeg and pepper as desired.
Garnish with almond slices, if desired.
