Cucumber Yogurt Mint Soup

The flavors in this delicious chilled soup
evoke thoughts of sunny Greece in me.
Fresh cucumber combines with tangy yogurt,
smoky cumin, honey, and lime in a great soup.
A garnish of snipped mint adds a burst of freshness.

Ingredients:
1 large cucumber
1 8-ounce carton plain low-fat yogurt
1 tablespoon lime juice
1 teaspoon honey
1/2 teaspoon ground cumin
1/4 teaspoon salt
2 tablespoons milk (optional)
1/3 cup snipped fresh mint
Fresh mint sprigs

directions
Peel the cucumber, then cut in half lengthwise.
Scoop out seeds and discard. Cut cucumber into 1/2-inch-thick slices.
In a blender container or food processor combine cucumber, yogurt, lime juice, honey, cumin, and salt. Cover and blend or process until smooth. Blend in milk, if desired. Stir in snipped mint. Cover and chill 2 to 24 hours. Stir before serving. Garnish with fresh mint sprigs.
