Fresh Asparagus and Bacon Salad
in a Tarragon and Lemon Sauce

I've found that Bacon and asparagus are also
suitable for cooking in the microwave oven.

Ingredients:
For Salad:
8 oz bacon, sliced
1 tablespoon oil
2 bunches asparagus, trimmed
For Dressing:
3/4 cup olive oil
1/4 cup lemon juice
1/4 cup tarragon vinegar
2 egg yolks, lightly beaten
2 tablespoons chopped fresh dill
2 shallots, chopped
1/4 cup grated parmesan cheese

Directions:
Cook bacon in hot oil until crisp.
Drain and cut into pieces.
Steam or cook asparagus in water
for about 5 minutes, or until tender.
Arrange bacon and asparagus on serving platter.
Combine oil, lemon juice, vinegar, egg yolks,
dill and shallots and mix well.
Spoon dressing over bacon and asparagus,
sprinkle with Parmesan and serve warm.
