Golden Roasted New
or Fingerling Potatoes

I like to bake those tiny new potatoes
they take less time to cook and crisp up.

Ingredients:
1 bag yellow new potatoes or fingerlings
1 clove garlic, peeled and pressed
2 tablespoons olive oil

Directions:
Preheat oven to 400 degrees F.
Slice potatoes into 1/4-inch discs.
Add to a large bowl with garlic and olive oil,
stirring with a spoon to coat.
Turn out onto large rimmed baking sheet,
shaking gently so the potatoes are in one layer.
Sprinkle generously with salt and pepper,
then bake in oven for 20 minutes.
Remove when tender and browned on bottom.
