Breaded and Fried
Scrambled Egg Cutlets

This was one of my "Experimental" recipes.
It's a cooked scrambled egg cut into ovals.
Breaded and fried in olive oil then it's
served with tomato sauce and grated parmesan.

Ingredients:
Ingredients:
2 eggs
1/2 cup milk
1/2 cup Italian flavored bread crumbs
1/2 cup flour
1 6 ounce can tomato paste
1/2 teaspoon Italian seasoning
1 tablespoon suger
olive oil for frying
salt to taste

Directions:
To make tomato sauce:
Open the can of tomato paste,
put in a bowl and add two cups water,
Italian seasoning, sugar and salt.
Heat in microwave until warm.

In a small bowl mix eggs and milk,
In a heated frypan cook egg mixture
until just firm enough to remove from pan,
let cool and cut the egg into two inch wide strips.
Dip the egg strips in flour, then the milk
and then in breadcrumbs to coat all over.

Fry the breaded egg in olive oil
and brown on both sides. Remove from pan
and serve with tomato sauce over it or on
the side and with grated parmasan cheese on top.
