Muffin Cup Meatloaf Roadside Diner Meatloaf

This is a real recipe for the best meatloaf
I got this staight from a cook at a diner.
You can also just bake this in muffin tins.

Ingredients:
1-1/2 lb. ground beef
1 c. Soft bread crumbs
3/4 c. Milk
1/2 c. Chopped onions
1/2 c. Parmesan cheese
1 Egg, slightly beaten
1-1/2 tsp. Salt
1/4 tsp. Pepper
1/4 tsp. Oregano
1 small can tomato sauce
3 slices Mozzarella cheese

Directions:
Heat oven to 350 degrees F.
Combine all ingredients except tomato sauce and Mozzarella cheese.
Mix lightly. In a loaf pan, shape loaf. Bake 1-1/2 to 2 hours.
Drain excess fat. Pour tomato sauce over loaf during
last 1/2 hour of baking time. Place Mozzarella cheese on top.
Bake 5 to 10 minutes.
