Prawn, Pea And Lemon Rice

This is so good and tasty, I really like this one.
The shrimp and the peas go very well with the lemon.

Ingredients:
1 tblsp olive oil
1 onion, finely chopped
1 clove garlic, crushed
1 cups long-grain white rice
1 litre (4 cups) chicken stock
1 cup frozen peas
cooked, peeled prawns, tails intact
baby spinach leaves
2 tsps finely grated lemon rind
2 tblsps lemon juice
cup chopped fresh mint
Salt and pepper, to taste
feta cheese, crumbled
Extra fresh mint, to garnish

Directions:
Heat olive oil in a large saucepan.
Add onion and garlic. Cook,
stirring occasionally, until soft.
Add long-grain white rice and chicken stock.
Bring to the boil. Then simmer, covered,
over a low heat for about 12 minutes, or until rice is tender.
Meanwhile, boil, steam or microwave peas until tender. Drain.
Stir peas, prawns, spinach leaves, lemon rind and lemon juice into rice. Stir over a low heat for about 2 minutes.
Stir in fresh mint, then season with salt and pepper.
Serve rice topped with feta. Garnish with extra mint.
