Sauteed Tender Chicken with
Fresh Spinach and Yogurt

I had some fresh spinach from my garden
and put together this good tasting chicken dish.
Light, delicious and tender chicken with fresh
spinach swimming in a creamy yogurt sauce.

Ingredients:
16 ounces Skinless Chicken Breast
2 tbsp Olive Oil
2 tbsp Butter, unsalted
2 tbsp Lemon juice
1-2 ounces Chardonnay
1 tbsp Oregano, ground
3-4 cups Spinach, fresh
Salt to taste
1 cup (8 fl oz) Yogurt, plain, low fat
4 oz Feta Cheese, crumpled

Directions:
Cut chicken into bite-sized pieces,
Sautee in olive oil and butter until browned.
Add lemon juice, wine, oregano, garlic.
When chicken is tender, add spinach,
yogurt and salt - Stir to blend.
Cover and remove from heat.
Serve over pasts or rice.
