Sweet and Sour Red
and Orange Beets

This is a very good recipe served warm.
Add some color to your table with a
bowl of delicious red and golden beets.

Ingredients:
1 1/2 pounds (about 3 cups) medium red beets without tops, rinsed
1 1/2 pounds (about 3 cups) medium golden beets without tops, rinsed
3/4 cup sugar
2 tablespoons cornstarch
1 teaspoon kosher salt
1 cup orange juice
2/3 cup malt vinegar
1 1/2 teaspoon grated orange zest
2 tablespoons unsalted butter
2 tablespoons honey

Directions
Heat oven to 400 degrees F.
Wrap red and golden beets separately in foil packets.
Roast 1 hour or until tender. Cool to room temperature.
Peel beets; cut into 1/2-inch dice.
In a large deep skillet, mix together sugar, cornstarch, and salt;
stir in orange juice and vinegar until cornstarch is dissolved.
Bring mixture to a boil; reduce heat to low and simmer 5 minutes,
stirring frequently, or until mixture is thick and translucent.
Stir in beets, orange zest, butter, and honey.
Continue to simmer until beets are glossy
and heated through, about 2 minutes longer. Serve warm.
