Velouté Sauce - Chicken Gravy

This is a real diner recipe for comfort gravy,
it's what they put on top of meatloaf
french fries and also mashed potatoes.

2 Tablespoons Butter
2 Tablespoons Flour
1 Cup chicken stock or broth
1 Cup milk or condensed milk
poultry seasoning to taste
black pepper to taste

Melt the butter and whisk in the flour to make a roux.
Cook this a little to avoid a floury taste before
you begin to add the stock and milk, a little at a time,
stirring constantly with the whisk.
Continue to stir as it thickens.
Season with poultry seasoning and black pepper.
