This is a rcipe for braising carrots in an oven
just like they do in the five star restaurants.
Ingredients:
20 small spring carrots, peeled and cleaned, stem trimmed to 1/2-inch
1 garlic clove, smashed
1 bay leaf
1 sprig of thyme
2 ounces extra virgin olive oil
4 ounces water
Salt to taste
Black pepper to taste
Directions:
Preheat oven to 300 degrees F.
Soak carrots in cold water to remove
any residual dirt from the stems.
Place soaked carrots in a bowl,
toss with garlic, bay leaf, thyme,
extra virgin olive oil, water, and salt and pepper
and transfer to a medium sized, oven proof pan.
Cover pan with aluminum foil
and braise carrots in the oven until tender.
Let carrots cool in the pan juice.
