Subway's Meatball
Marinara Sauce

I like the subway meatball sandwiches and
always tried to make my own at home.
The main tastes are oregano and sugar.
Here is the recipe that I came up with.
Make your own meatballs to go with it.
I Like to make this with turkey meatballs.

Ingredients:
1 onion, peeled and finley chopped
4 garlic cloves, peeled and minced
2 cups canned crushed tomatoes
1/4 cup cold water
1/2 teaspoon red wine vinegar
1 teaspoon white sugar
1 teaspoon brown sugar
2 teaspoons dried oregano
2 teaspoon olive oil
1 dash of salt

Directions:
In an oiled skillet, combine the onion and garlic.
Cook, stirring occasionally with a wooden spoon,
for 3 to 5 minutes, or until the onion
starts to soften but not brown.
Reduce the heat to low.
Add the tomatoes, water, sugar, oregano and oil.
Stir to blend all ingredients well and
cook on a low simmer for about 30 minutes.
Refrigerate up to 1 week until ready to use.

This is close in taste, I added some corn starch to thicken it up just a tad.

My 11 year old son (who is extremely fussy) and daughter thought the recipe was better than subways!! I added balsamic vinegar, alittle more sugar and half tablespoon of carnstarch.

I try a new recipe (or just wing it) each time I make a marinara. This is one of the simplest, yet tastes better than any I've made yet. I would never water down the tomatoes, and solved the "too thin" problem by skipping the water and adding small can tomato paste (6 oz). I like my food with stronger flavor (maybe my age!) so always increase herbs and garlic. I also added basil. Used butter in place of oil which many recommend. I always simmer mine for 1 to 3 hours (or even 4 if a large batch). With the tomato paste this was already thick so won't be simmering it as long. Even after 10 mins this tastes great!
I know it looks like I changed much of this, but just always tweak a bit for my own taste. The basic recipe would still be great!

I will be trying this out along with the recipe for copycat subway bread, thanks. I like mines thick as well and might amend this with tomatoe paste like another person said.
