Mushroom Chowder with
Fresh Mushooms and Bacon

I had some fresh mushrooms taking up room in my
refrigerator and decided to make a chowder with them.
Wanting more than just a cream of fresh mushroom soup,
I was very pleased with this recipe that I came up with.

Ingredients:
2 cups fresh cremini mushrooms, sliced
2 slices bacon, diced
2 cups chicken broth
2 cups potatoes, peeled and diced
1 onion, peeled and chopped
1 (10 ounce) can chicken stock or broth
1 cup milk
2 tablespoons flour
black pepper to taste
parmesan cheese

Directions:
In a soup pot on medium heat, fry bacon- set aside.
With bacon drippings, fry onions until clear, add mushrooms.
Stir for about 5 minutes. Add chicken stock and potatoes.
Cook until potatoes are tender. Return bacon to pot.
Add flour and black pepper, stir to combine well.
Stir well and serve with cheese on top.
