I started out to make simple green pea hummus,
ended up adding an avocado and this is the dish.
I think the fresh mint leaves add a great touch.
Ingredients:
2 cups sweet green peas
1 ripe avocado
1 tablespoon lime juice
1 clove garlic, peeled and minced
1/2 teaspoon salt or to taste
6 fresh mint leaves for garnish
Directions:
Spoon out the avocado flesh and
put into a food processor.
Add the lime juice and garlic.
Add the green peas and salt,
process until desired consistency.
