Bread Pudding with
Strawberry Bagels

This is a recipe for making
a strawberry bread pudding.
With fresh strawberries and
chopped up strawberry bagels.
Buttering and sugaring the
inside of the baking dish
results in a nice brown and
tasty crust which is great.
I thought there would be more
of a strawberry flavor but it was
good served warm with ice cream.

Ingredients:
6 strawberry mini bagels
2 cups fresh strawberries, washed and hulled
1 tablespoon butter
2 eggs yolks, beaten
4 egg whites, beaten
1 teaspoon vanilla extract
1/2 cup cream
3/4 cup milk
1/4 cup white sugar
1/2 teaspoon ground cinnamon


Directions:
Preheat oven to 350 degrees F.
Cut bagels into small pieces,
then chop into crumbs in food processor.
Butter and sugar an 8 inch square baking pan.
Place bagel crumbs in a large mixing bowl.
In a medium mixing bowl, combine eggs,
cream, milk, sugar, cinnamon, and vanilla.
Beat until well mixed. Pour over bagel crumbs,
mix until covered and soaking up the egg mixture.
Pour mixture in baking dish,
sprinkle top with cinnamon/sugar, cover
and bake in the preheated oven for 45 minutes.
