Chocolate Wheat
Bread Pudding

This is a recipe I made for a
chocolate bread pudding with wheat bread.
It came out with a good chocolate flavor
a creamy texture although it didn't rise
as much as I thought it was goingto,
it's still good enough to make again and
present to company with ice or whipped cream.

Ingredients:
4 cups fresh wheat bread crumbs
2 cups milk, scalded in microwave
3 eggs, broken and stirred
4 tablespoons cocoa powder
6 tablespoons white sugar
1/2 teaspoon salt
1 teaspon vanilla extract
2 tablespoons un-salted butter
1 tablespoon sugar
Vanilla ice or whipped cream

Directions:
Butter and sugar a 1 1/2 quart
baking casserole dish, set aside.
Pre-heat oven to 325 degrees F.
Put milk in a glass bowl and heat
on high power in microwave for 6 minutes.
Remove to let cool a little.
Stir cocoa into milk, add salt and sugar,
stir to combine well.
In a seperate bowl whip eggs, add vanilla.
Cut crusts from wheat bread and
place in a food processor,
process to fine bread crumbs.
Place crumbs in mixing bowl,
stir in milk mixture with eggs.
Add milk to bread crumbs
and let sit 10 minutes.
Por into buttered casserole dish,
cover and bake for 55 minutes.
Remove from oven and let cool 30 minutes.
Serve with vanilla ice cream or whipped cream.
