Cucumber Salad

If you make this triple the recipe,
it keeps well in the refrigerator.
It's real good and good for you too.
I was specifically looking to make a
good cucumber salad with no oil in it.
This is a good one!

Ingredients:
1 medium cucumber, quartered and sliced
1 medium tomato, chopped
1/2 cup chopped green pepper
1/3 cup chopped red onion
2 tablespoons lime juice
2 tablespoons red wine vinegar
2 tablespoons chopped green chives
3/4 teaspoon dill weed
1/2 teaspoon salt or to taste
1/4 teaspoon ground black pepper

Directions:
In a large bowl, combine the cucumber,
tomato, green pepper, onion and chives.
in a small bowl, combine lime juice,
vinegar, dill, salt and pepper.
Pour over cucumber mixture; toss to coat.
Cover and refrigerate for 15 minutes.
Serve with a slotted spoon.
