Hoi Tod - Fried Mussels

This fried mussels recipe is a famous
and typical Thai style pancake which
you see it almost everywhere in Thailand.
Normally the shop that serves this dish
would also serve the stir fried rice noodle
(Pad Thai) as well.

Ingredients
10 cooked mussels
1 cup of corn flour
1 cup of soda water
1 table spoon fish sauce
2 table spoon light soy sauce
salt to taste
2 tablespoons of vegetable oil
1 clove garlic, peeled and chopped
Ground white pepper
1 teaspoon of sugar
1 eggs
2 tablespoons of finely chopped spring onion
A handful of mung bean sprouts

Directions:
Mix the corn flour and soda water well.
if the mixture is too light add more flour.
Add mussels and some salt in the mixture, mix well.
Heat up the oil in the pan fry add chop garlic,
slightly brown it,add mixture into the pan.
Don't break the mixture, cook until thickened.
Add 1 egg on top of the pancake
then break the egg york.
Before turning over the mixture,
make sure the base is nice and crispy.
Break the pancake into medium square pieces.
Add fish sauce, soy sauce, sugar and
sprinkle white pepper on the mixture.
Then add mung beans and stir fry together
with the pancake about 30 seconds.
