I like the idea of making some dishes
ahead of time so that it saves me time
to do other things on a busy Holiday.
Here is a recipe for mashed potatoes.
I make this the day before Thanksgiving
and they are always nice and creamy good.
Ingredients:
8 Russet potatoes, peeled and quartered
3 ounces cream cheese, room temperature
1/2 cup sour cream
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt or to taste
1/2 teaspoon ground black pepper
1 large egg white, slightly beaten
1 tablespoon butter
Directions:
Spray a casserole dish with cooking spray.
In a pot of boiling water over medium-high heat,
cook potatoes until tender when pierced with a fork;
about 20 minutes, remove from heat and drain.
Mash potatoes until there are no lumps.
Add cream cheese, sour cream, garlic and onion powders,
salt, pepper, and egg whites; blend well.
Dot with butter. Cool slightly, cover, and refrigerate.
Preheat oven to 350 degrees F.
Take potatoes out of the refrigerator
30 minutes before baking. Bake, covered,
40 minutes or until steaming hot in center.
Remove from oven and serve immediately.
